You'll have to wait until 5th level to pick up your first ranger level then, the Ability Score Increases are tied to class level, not to character level. So you'd need to take your 4th level in paladin to be able to drop one in WIS, and go Ranger the level after.

Certainly would be handy to have a ranger in this jungle!

Which archetypes can I choose from? The three basic or some of the expanded?

I think we originally started with the basic rules, but I'm happy to include whatever official (no unearthed arcana) expansions you guys want to play. I don't have Xanathar's guide myself, but spider does and I'm sure would be happy to help :)

So the options are:

Champion
Battle Master
Eldritch Knight
Arcane Archer (XGE)
Cavalier (XGE)
Samurai (XGE)
Plus maybe the dragon knight?

I've already looked at the basic three but what to confirm my options before I dig into the others!

First 6 are good for sure, I think the Dragon Knight might be homebrew. Spider can you confirm if DK is legit?

Haven't seen any Dragon Knight in official books I've read...

*Edit:. Looks like it was in SCAG.

I've still got my plan of not really any plan. Just sticking with Sorcerer pretty much indefinitely.

Okay, looked at them and none seem a particularly good fit for Varsk. I'm interested in the EK but I'm wondering how Varsk would rp into that so probably battle master? Dunno, going to probably ponder it a bit.

The plan for my part is to set up circumstances of some fashion that will lead you into the L3 choices more naturally (or do it the next downtime break, whichever comes first). So you won't probably all reach L3 at the same time, but there is scope to add new, weird aspects to your character through external forcing if you'd like to.

Kal the woodland paladin is fairly straightforward, I think.

Gwen is still going for tome. In the future she will probably go into bard, but I do not know what level she shpuld go into that.

Merric will likely go for the blade pact, since no one will arm him :P

As far as being a Druid goes, Syli is pretty much set. Any other decisions class-wise pretty much are decided by what she encounters or studies, plus what ability scores and feats she takes. As a Moon Circle Druid, Syli definitely wants to pick up Resilient (Constitution) and/or War Caster, and while I don't consider Dexterity particularly critical (what with wildshape replace ability scores), she's definitely going to need some more Wisdom.

As far as multiclass options go, the only ones that really would offer anything to Syli over regular druid would be Monk (which doesn't really fit from a flavor perspective) and Cleric (So you can cast divine spells while you cast divine spells. Add Nature domain for maximum redundancy). From a flavor standpoint, Rogue would be interesting, but I don't think I can justify giving up two levels worth of spells AND delaying wildshape progression just for the sake of being able to dash or hide as a bonus action (plus expertise). Barbarian's another interesting one, but the 13-STR prerequisite locks me out.

I did notice talk earlier about using Xanathar's subclass options. Does this mean spells from Xanathar's are available too? I won't say no to a wider spell selection.

Sure. XGE is legal and seems to be gradually getting incorporated into the online resources too. If there's anything in there that you think looks interesting, I'm fine with you picking it up :)

One of my RL players is in a similar boat to you re. being a Moon Druid (except she's almost always a bear) and is a little sad that she can't be a bearbarian :)

Ooooooooooh!!!

Those were question marks indicating that you'd heard something in that direction, but didn't know where it was; the green circle is roughly where Varsk saw the two figures scooting down the slope. He doesn't know exactly where they are, but he can guess they're down there somewhere.

No, he wouldn't have seen her get shot since she ran behind him while he was being attacked.
